Prosciutto & Melon

INGREDIENTS:

  • Fresh melon (Canteloupe, Honeydew, or another variety of your choice)

  • Prosciutto, sliced

  • Olive oil

  • Balsmic glaze or a well-aged balsamic vinegar

  • Sea salt flakes

METHOD:

Slice the melon into 1/4-inch slices and cut into pieces sized to eat in two or three bites.

Wrap the melon slices with prosciutto and arrange on a platter.

Drizzle with olive oil and balsamic, and sprinkle with flaked sea salt.

For added colour, garnish with arugula or basil.

Enjoy on the patio in summer with a crisp dry white wine and a good friend!
