Video: Spring Chopped Salad
Serves 2-4
INGREDIENTS
Assorted green veggies (asparagus, green beans, baby cucumbers, celery, zucchini)
½ head Radicchio, chopped
250ml Pitted olives
¼ cup Nuts, toasted & chopped
1 cup Fresh herbs (basil, chives, mint, dill), chopped
100g Ricotta Salata, grated
Olive oil & white wine vinegar
Salt & pepper
METHOD
Blanch the vegetables that need softening (asparagus, green beans, etc), by boiling for a couple of minutes then shocking in ice water.
Chop the blanched and raw veggies (baby cucumbers, celery, zucchini, etc) into different shapes and sizes for interest, and combine in a large mixing bowl with the chopped radicchio, olives, nuts, and fresh herbs.
Add the grated cheese, olive oil, vinegar or lemon juice, salt and pepper. Mix it well and adjust to taste.
Serve alongside grilled meat or fish and some nice crusty bread. Enjoy!
