Video: Fresh Pasta & Cacio e Pepe

Fresh Spaghetti

INGREDIENTS:

  • 100 g Tipo 00 flour 

  • 100 g Semolina

  • 2 Eggs 

  • Salt

  • Pepper

  • Pecorino Romano Cheese

  • Parmigiano Cheese

  • Butter

    METHOD:

    1. Combine 100g of Tipo 00 flour and 100g of semolina and pour into a mound on your work surface.

    2. Create a well in the centre of the mound. 

    3. Crack the eggs into the well and “scramble” the eggs with a fork, slowly bringing in the flour, until the mixture is thick enough to be kneaded.

    5. Knead the dough for 5 to 10 minutes, until it is smooth and a finger mark pressed into it slowly bounces back. Wrap the dough in plastic wrap and let it rest for at least 15- 20 minutes. 

    6. Flatten the dough ball with your hands, so it can fit thought the pasta sheeter. 

    7. Starting at the widest setting, crank the dough through the sheeter and catch it with the backs of your hands to prevent the dough from warming up and cracking. Pass it through a few times before cranking the sheeter down to a thinner setting.

    8. When the sheet is thin but still has heft, cut it into three pieces and run them through the spaghetti attachement on the sheeter (or roll them up and cut them by hand!).

‘Cacio e Pepe’

INGREDIENTS:

Sea salt

Fresh spaghetti

Black pepper, freshly ground

Grated Pecorino cheese

Butter

METHOD:

  1. Combine the pepper and cheese in a larger mixing bowl and set aside.

  2. Season a pot of boiling water generously with sea salt.

  3. Drop the spaghetti into the water and stir it around a bit to prevent sticking to itself or the pot.

  4. Cook until ‘al dente’, about 3-4 minutes for fresh pasta, then add to the mixing bowl with the pepper-cheese mixture, adding some of the cooking water to the bowl.

  5. Using tongs, stir and lift the pasta, combine it with the pepper-cheese mixture and creating a sauce with the starchy water. Add more cooking water, as needed, to make a sauce.

  6. Add in the butter and mix well.

  7. Plate into a serving dish and finish with more pepper and cheese. Enjoy!
